Delectable and filled with beneficial antioxidants including vitamin C, manganese and dietary fiber, strawberry omelet makes a vibrant and impressive dish that brings life to the table. The sauce made with orange juice, sugar, and butter perks the dish up even more and gives it an invigorating flavor and fragrance.
For best results, use fresh sweet juicy strawberries and buy in season. Strawberries are at their most flavorful at room temperature and eaten on the day they are picked and bought. Before cooking the strawberries, rinse them gently under cool running water to remove any dirt or residue from pesticides. Place the strawberries in a colander while rinsing so that the water can flow out of the bottom. Don’t soak the strawberries in water because they are porous and easily absorb the water, which can cause them to lose flavor. After washing, pat the strawberries dry using a paper towel. With a sharp paring knife, cut the tops off the strawberries and slice them into pieces for the omelet.
When buying strawberries to make this recipe, choose those with a bright red and shiny color. A good indication of sweet strawberries is a wonderful sweet and fruity fragrance. The strawberries should be firm with no signs of soft spots and bruising. A dull red color is an indication that they are overripe while a tinge of green means they are not ripe. Take note that even if you allow the unripe strawberries to ripen, they will no longer sweeten or improve in flavor.
Preheat the broiler. Put half the butter in a skillet over high heat. Once it melts, add 2 tablespoons of sugar. Cook for 2 minutes, stirring constantly. Keep stirring while adding the orange juice. Bring to a boil. Cook 2 minutes.
In a small bowl, stir together the cornstarch and water. Add to the butter sauce and cook 1 minute, stirring occasionally.
Pour the butter mixture over the strawberries and allow to stand for 15 minutes.
Place the remaining butter in a large non-stick skillet. Once the butter melts, add the eggs and cook for 30 seconds, stirring constantly with a fork. Stop stirring and cook another 30 seconds, or until the top of the omelet is set. Add half the strawberries and cook another 20 seconds.
Carefully roll the omelet onto a serving platter. Sprinkle with remaining sugar and broil for a few minutes in the oven, until set.
