A classic American salad made of fresh apples, walnuts, and celery, dressed in mayonnaise, and served on a bed of crisp lettuce, Waldorf salad makes a refreshing appetizer or a light meal. This gourmet recipe for autumn salad uses fresh autumn produce and adds more excitement to the dish with the addition of cranberries, red onions, cabbage, celeriac, and kohlrabi, a crisp vegetable that is a cross between a cabbage and a turnip. The salad is made healthier with the use of yogurt dressing instead of mayonnaise and spiced with Dijon-style grainy mustard, vinegar, parsley, tarragon, and garlic salt.
The first Waldorf salad was created in 1893 and served at the Waldorf Astoria by the maitre d’hotel, Oscar Tschirky. The original recipe was a very simple mixture of red-skinned apples, celery, and mayonnaise. Later, the chopped walnuts were added to create the classic American salad that is widely known today. Raisins are also a very common addition to this dish. Some prefer to use yogurt or sour cream instead of mayonnaise for the dressing.

This recipe is especially made for Ottawa, Canada or the Eastern Forest region where the ingredients in this recipe are abundant during the autumn season. You can also make this recipe with other ingredients. If you can’t find kohlrabi in your area, for example, you can use turnips instead. You can also use red cabbage for more color and a festive appearance.
In the small mixing bowl, blend the dressing ingredients together and allow to stand while you prepare the rest of the salad.
Prepare the vegetables and fruits, washing, peeling, and chopping them as directed in the ingredients list.
Toss salad ingredients together in the large bowl until well mixed.
Add dressing to salad and toss again until everything is well covered. Serve and enjoy!
