Here’s a classic, easy to prepare, and healthful gourmet recipe soup that’s ideal served all alone or with some salad and bread.
Pour the oil into a 6 quart pot and place over medium heat. Once the oil is warm, add the onions, celery, and garlic. Saute for about 8 minutes, or until tender.
Add the water, stock, lentils, and barley and bring to a boil over high heat. Cover and reduce the heat to low. Simmer until the lentils and barley are tender, about 1 hour.
Add the tomatoes, tomatoes, salt, pepper, mint, and oregano and bring to a boil over medium high heat. Reduce heat to low and simmer for 5 minutes.
Add the spinach, using a spoon to break it up. Simmer until spinach is warm, about 7 minutes.
