Meat in Pizza Style: Chicken Pizzaiola

Roughly translated to “meat in pizza style,” pizzaiola is a Neapolitan dish that features meat cooked with tomatoes, olive oil and other pizza flavor ingredients like capers, olives, oregano, basil, tomato paste, pesto, peppers, and so on.

In this gourmet recipes, boneless chicken breasts are fried until golden and simmered in a delicious tomato sauce flavored with garlic, oregano, parsley, and black pepper. This is a great idea for pizza lovers who are trying to cut down on carbohydrates.

The boneless chicken meat is sliced into two and pan-fried until golden brown in this easy chicken recipes. To cook a beautiful golden brown chicken, the key is to fry the chicken in the correct temperature. Choose cooking oil that has a high smoke point for frying the chicken. Some of the best oils to use include vegetable shortening, peanut oil, and lard. It is also important to use a heavy-bottomed skillet like cast iron pan for even heat distribution and from keeping the skin of the chicken from burning. This kind of pan allows you to cook meats at very high temperature.

When healthy chicken recipes, the oil should be about an inch deep in the pan or skillet and about halfway the chicken when it is placed in the pan. Before adding the chicken, the oil or fat should be about 350 degrees F in temperature. In this case, it is ideal to use a kitchen thermometer to determine how hot the oil is. Use tongs to lower the chicken pieces into the oil with the skin side down. Work away from your self to avoid oil splattering to your direction. Start laying the chicken at the edge close to you. Do not overcrowd the pan or the chicken will cook unevenly. Overcrowding also lowers the temperature of the oil and results in greasy and soggy chicken.

Easy Chocolate Nut Brownies for Kids

Chocolate nut brownies is a simple easy desserts adapted from The Williamsburg Cookbook and consists of a few handful ingredients including butter, unsweetened chocolate, eggs, sugar, vanilla extract, flour, baking powder, and pecans.

Light, fluffy and crunchy chocolate nut brownies are a pleasurable easy dessert recipes for any day or occasion. It's easy to whip up and takes only a few minutes to bake. It's the perfect healthy recipes  for novice bakers and is simple enough for children to bake. For superior results, use high quality chocolate and butter. Poor quality chocolate will make poor tasting brownies.

You don't need electric mixers or beaters when mixing the brownie batter. In fact, it is better to mix the batter by hand using a spoon or spatula. Over mixing the batter will result in dry and tough brownies that forms a thin crust on the top when baked. Mix the dry and the wet ingredients separately and blend them together just until all the dry ingredients are moist. Sift the flour to get the precise amount you need, no more and no less. When placing the batter in the pan, spread it evenly so that the brownies bake evenly with a uniform thickness and texture throughout.

Use glass or a shiny metal pan for baking the brownies. Dark nonstick pans cause the brownies to become soggy and decrease in volume. Grease the pan before making the batter and lightly dust it with cocoa powder to make it easier to pop the brownies out of the pan after slicing them into squares or rectangles. To allow your brownies rise, grease only the bottom of the pan. While baking, the brownies will slightly shrink from the pan. The brownies are done if you insert a toothpick near the edges and it comes out clean. The center will be slightly sticky compared to the drier edges.

Variety Of Gourmet Chicken Recipes

Chicken can be made into a thousand and one dishes, any time of the day, throughout the year. Chicken recipes do not have to be the same old thing everyday.

This protein-rich white meat can be grilled, braised, stewed, roasted, and deep-fried. It can be ground and formed into meatballs, burger patties, spring roll filling, meatloaf, sprinkled on salads and pasta, mixed with vegetables, and other delicious easy chicken recipes. Best of all it can be made into a delicious broth, stock and soup. The spices, sauces and seasonings as well as the other ingredients you combine with the chicken will produce satisfying chicken recipes for the whole family.

Chicken is delicious cooked whole or served as grilled chicken breast fillets, spiced as buffalo chicken wings, or fried as legs or thighs. To keep them lean and low-fat, remove the fat and the skin before cooking. Grill, bake, or roast instead of deep-frying the chicken. The flavor profiles change from country to country, with its specialized sauces, spice rubs, marinades, and breading. Chicken can be used as a main course, or as a supplemental ingredient for soups, salads and casseroles.

As in meat recipes, observe safety practices when handling raw poultry. Wash knife, chopping board, and plates that contained the raw chicken to avoid cross contamination. The Food Safety and Inspection Service (FSIS) of the United States Department of Agriculture (USDA) has issued guidelines on handling chicken. Cook “whole chicken to a safe minimum internal temperature of 165 °F (73.9 °C) as measured with a food thermometer. Check the internal temperature in the innermost part of the thigh and wing and the thickest part of the breast.”

Remember also not to overcook chicken especially the breast part, which will get dry and flavorless. Chicken meat absorbs most flavors so marinate them in your favorite spices (a combination or just one, like rosemary, which is perfect with chicken) when roasting or frying. The best chicken recipes are those wherein the chicken is moist, flavorful, cooked through and tender (but not mushy).
