Berry Gratin With Champagne Sabayon

The sauce of the easy appetizers you need is based on a foamy mixture called a sabayon (a cousin of the light, egg-based Italian dessert zabaglione). A sabayon is made by beating egg yolks with a liquid over simmering water until thickened and increased in volume. ( the liquid can be water, but champagne or wine pairing is often used for a savory sabayon.) The sabayon must not get too hot during cooking or it will become grainy: if it begins to feel warmer than body temperature, remove the pan briefly from the heat, beating continuously, until the mixture cools. Then return the pan to the heat and continue cooking. Sabayon may be served warm or cold; a cold sabayon is beaten off the heat until cooled.


Sabayons may be sweet or savory. They may be served simply as a sauce, often flavored with an alcohol, or they may form the base of some mousse mixtures. They may also be used for sweet or savoury gratins. Cornflour is sometimes added for stability.

Ingredients:

4 handfuls mixed berries
3 egg yolks
2 tablespoons caster sugar
3 tablespoons sparkling wine
Zest of half a lemon


Methods:


  1. Turn the oven on to grill with the rack about 6 inches/15 cm from the heat.
  2. Arrange the berries in individual gratin dishes and set on a baking sheet.
  3. Prepare the Sabayon: Put the egg yolks, sugar, and wine into a roomy glass bowl.
  4. Whisk to mix.
  5. Set the bowl over a saucepan partly-filled with hot, but not simmering, water.
  6. Don't let the bottom of the bowl touch the water beneath.
  7. Whisk until the mixture is frothy, pale, and ribbony, 5 to 8 minutes.
  8. Remove from the water.
  9. Whisk in the zest and keep whisking a minute or two to cool slightly.
  10. Spoon the sabayon over the berries and place under the grill until the sabayon is bubbly and golden, a minute or two.
  11. Transfer to plates and serve immediately.

Favorite Tomato Soup Appetizer Recipe


There are a lot of vegetable soup recipe out there, and everyone has her favorite tomato soup recipes. This easy appetizer recipes is a combination of sweet and sour delightful, and it pairs very nicely with a crusty loaf of French bread. Mmm-mmm!




Easy appetizers Ingredients
1 pound ground chuck
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup onion, chopped fine
1 cup oatmeal
1/2 cup brown sugar
1/4 cup lemon juice
1 10-ounce can Campbells tomato soup

Instructions


Mix chuck, salt, pepper, onion and oatmeal.
Make into balls about 1" in diameter; do not brown.
Combine sugar, lemon juice and soup and pour over meatballs.
Cook one of the following ways:
In a Crock-Pot: 2-3 hours on high. This is the best way to do them.
In a 350F degree oven for 1 1/2 hours (turn over 1/2 way through)
On top of the stove in a pot for 1-2 hours

Making Homemade Vegetable Soup

A homemade vegetable soup recipe is a wonderful thing. It's just so much better than anything you'd get in a can. For one thing, only ingredients that you like end up in the appetizer recipes. Plus, you have the opportunity to make it much healthier. And, well, making something yourself is just more satisfying healthy recipes.

Making your own homemade vegetable soup is one of the easiest things in the world. And it's just so versatile. There are a ton of different kinds of vegetable soups — like minestrone, cabbage soup, chicken noodle,beef barley... and so many more.


Ingredients
1 tablespoon olive oil
1 medium onion, chopped
1 garlic clove, chopped or minced
32 oz. low sodium tomato-vegetable juice (such as V8)
16 oz. frozen mixed vegetables
¼ cup orzo pasta
½ teaspoon dried basil
Salt
Freshly ground pepper
Grated fresh Parmesan cheese

Preparation Instructions
1. Fill a medium saucepan with water and place over medium high heat. Bring to a boil.

2. In the meantime, heat the oil in a large saucepan over medium heat. Once warmed, add the onion and sauté until tender, about 3 minutes. Add the garlic and cook until fragrant. Add the tomato-vegetable juice. Bring to a simmer. Reduce the heat to low and simmer gently for 10 minutes.

3. Add the frozen mixed vegetables. Stir. Simmer until heated through.

4. Once the water in the medium saucepan boils, add the pasta. Cook until pasta is almost done; drain.

5. Add the pasta and the basil to the soup. Cook until pasta reaches desired doneness. Season with salt and pepper. Serve the soup in bowls and sprinkle each with Parmesan cheese.

Tomato and barley vegetable soup recipe

Tomato and barley vegetable soup recipe


Healthy Recipes Ingredients:
1 tbsp olive oil
2 ribs celery, chopped
2 medium carrots, chopped
1/2 onion, chopped
2 cloves garlic, minced
3 cups good quality vegetable broth
1 16-ounce can diced tomatoes (do not drain)
1 cup pearl barley
1/2 tsp Italian seasoning
2 cups spinach leaves (optional)
salt and pepper
Preparation:
In a large soup or stock pan, heat onions and garlic for a minute or two, then add carrots and celery. Heat for 4-5 minutes, to start vegetables cooking.

Add tomatoes (do not drain), vegetable broth, barley and Italian seasoning, stirring to combine. Bring to a boil, cover, then reduce to a medium-low simmer.

Cook for 30-40 minutes, or until barley is cooked and carrots are soft. Stir in spinach, heat for one more minute, then turn off heat. Season generously with salt and pepper.

Bacon and Cheddar Puff Pastry Crisps

Ingredients
1 package (17.3 ounces) Pepperidge Farm® Puff Pastry Sheets, thawed
1 cup finely shredded Cheddar cheese (about 4 ounces)
1 pound bacon, cooked and crumbled
1/2 cup prepared ranch salad dressing
2 tablespoons chopped fresh chives

Instructions

Preheat the oven to 400 degrees F.
Unfold 1 pastry sheet on a lightly floured surface. Roll the pastry sheet into a 12x12-inch square. Cut into 36 (2-inch) squares. Prick the pastry squares with a fork. Repeat with the remaining pastry sheet, making 72 squares in all. Place the squares onto baking sheets.
Bake for 8 minutes or until the pastries are golden brown. Using the back of a spoon, press down the centers of the hot pastries to make an indentation.
Spoon about 1/2 teaspoon each cheese and bacon onto each pastry. Bake for 5 minutes or until the cheese is melted. Remove the pastries from the baking sheets and let cool on wire racks for 10 minutes. Top with the dressing and chives.

Finger Buffets Appetizer

Planning a party and looking for some ideas for finger buffets that are practical, tasty, and impressive?

These little appetizer recipes bites are beautiful and very simple to make. They're a play on the classic deviled egg, but these are actually easier! The recipes and ideas for buffet finger foods and easy appetizers are creative, easy to pull off, and a ton of fun to eat.
Ingredients

12 eggs
1/4 cup salmon roe
1/4 cup finely diced red pepper
1/4 cup finely diced chives
1 tbsp freshly cracked pepper
2 tbsp Sea salt
3 tbsp fresh dill leaves

Preparing the healthy recipes

First thing is you need to hard boil the eggs. I use the oven method, which works great for cooking a lot at once. What I do is place my eggs in a muffin tin (12 eggs, 12 muffin spots, makes sense!)

Have the oven preheated to 325 and bake for 30 minutes. Don't use a non-stick pan, or else you'll get yellow eggs. I use a silicon muffin tin, but metal works too!

Dump your cooked eggs in a bowl of cold water to keep them from over cooking.

The other way to make hard boiled eggs is to put the eggs in a pot, top with water, and put it on the stove on high. When the water starts rapidly boiling, cover the eggs and take them off the heat. After 15 minutes, they're hard boiled!

Peel them and store them until you're ready to party!

When you want to pull these out as appetizers, I set it up like a little buffet. Fill small cups (egg cups would be really cute), with various toppings. I included my favorites in the ingredient list. Let your guests put on their choices to make unique eggs.

You can also make these deviled eggs and then top them, but I don't think it's necessary. The key is great quality toppings.

Paniyaram: Spicy Indian Appetizer

Paniyaram can be made either sweet or salty easy appetizers. You need a special pan called paniyarakkal to make paniyaram. These are nonstick pans with holes or cups in them where you pour the batter so that it comes out round when it is cooked. The batter is turned only once so that both sides are nice and golden. Serve paniyaram as a teatime healthy food snack or as a delicious appetizer. This also goes well with tomato chutney and can be enjoyed as a scrumptious breakfast or light dinner.


Ingredients
2 cups uncooked rice
3/4 cup of Urud Dal (a type of Indian bean)
1 teaspoon salt or according to taste.
Oil for frying.
1 teaspoon mustard seeds
1 teaspoon of Channa dal (a type of Indian bean)
1 teaspoon curry leaves
2-3 medium sized green chilies
1 medium onion, finely chopped

Preparation Instruction for Appetizer Rrecipes
1. In a bowl soak rice and Urad dal overnight or for at least 6-7 hours.

2. After soaking, grind it to form a smooth batter. Add salt and allow it to ferment in a damp dark place for about 8-10 hours.

3. When ready, heat some oil in a pan. Add mustard seeds and fry until golden brown. Add Channa dal, curry leaves, green chilies, and onions. Cook and stir until golden brown. Add seasoning mix to batter and mix well.

4. To make Paniyaram, pour batter into well-oiled paniyarakkal (a special type of Indian cooker) cups. Close lid and allow it to cook on medium flame, turning to cook both sides. Serve hot with coconut, tomato chutney, or sauce.

Bacon-Wrapped Scallops

2. Stretch the bacon a little, then wrap one piece around each scallop. Run a toothpick through the bacon and scallop to keep the bacon in place.

3. Cook under the broiler for 5 minutes. Remove the scallops, turn, and cook for another 5 minutes or until cooked through.

4. Serve with tartar sauce, if desired.

Nachos for Holiday Party

Appetizer Recipes Ingredients:
Juice of 1 lemon
3 Tbsp (45 mL) extra-virgin olive oil
2 tsp (10 mL) mustard
1 Tbsp (15 mL) apple juice concentrate
Black pepper, chipotle powder, and salt to taste
1 avocado, chopped
1 red bell pepper, chopped
1 mango, chopped
1/4 cup (60 mL) red onion, finely chopped
2 cups (500 mL) cooked black beans
1 - 16 oz (450 g) package whole grain baked tortilla chips
Cilantro for garnish


Preparation:

Whisk together lemon juice, olive oil, mustard, apple juice concentrate, black pepper, chipotle powder, and salt. Set aside.

In separate bowl, toss the avocado, red bell pepper, mango, onion, and beans with the dressing. Place tortilla chips on serving plate and top them with bean mixture. Garnish with fresh cilantro and serve.

Serves 16.

Each serving contains: 209 calories; 6 g protein; 6 g total fat (1 g sat. fat, 0 g trans fat); 34 g carbohydrates; 5 g fibre; 127 mg sodium

Marinated Tortellini Appetizers Recipe

These cute easy appetizers kabobs from Pat Schmidt of Sterling Heights, Michigan will lend a little Italian flavor to any get-together. Cheese tortellini is marinated in salad dressing, then skewered into toothpicks along with stuffed olives, salami and cheese and there it goes delicious appetizer recipes.

Makes 9 healthy food servings

Ingredients
18 refrigerated cheese tortellini
1/4 cup fat-free Italian salad dressing
6 thin slices (4 ounces) reduced-fat provolone cheese
6 thin slices (2 ounces) Genoa salami
18 large pimiento-stuffed olives




Directions
Cook tortellini according to package directions; drain and rinse in cold water. I
n a resealable plastic bag, combine the tortellini and salad dressing.
Seal bag and refrigerate for 4 hours.
Place a slice of cheese on each slice of salami; roll up tightly.
Cut into thirds.
Drain tortellini and discard dressing.
For each appetizer, thread a tortellini, salami roll-up and olive on a toothpick.
Yield: 1-1/2 dozen.
